What was supposed to be a lazy
Sunday wasn't really and me and my BF decided to cook a nice Sunday dinner. We
choose a traditional bolognese sauce and tried to make it as
authentic as possible (as far as Belgians can do that).
What you need (or what we've put in
it):
- 2 onions
- a couple of garlic cloves
- 2 carrots
- 2 eggplants
- 2 bell peppers
- 1-2 small chili's if you want to spicy it up a little bit
- 3 cans of diced tomatoes (about 700g in total)
- minced pork (about 700g) (preferably half pork, half beef)
- a couple of squeezes/tea spoons of tomato paste
- 2 glasses of milk
- of course you add salt, pepper, nutmeg, a mix of Italian herbs,... as you go
- we also added some white wine and red wine vinegar to give it that little bit extra
How many vegetables and which ones you
put in the sauce doesn't really matter. Buy some extra, take your
leftovers and start cooking! Oh yes, you might think this is a lot of
food, it is. In total this serves about 12 portions.
What you do:
Cut all vegetables, no need to cut them
real small.
Sauté all vegetables and meat in a
frying pan on a hot fire.
Combine everything in a big pot on a
low fire and add canned tomatoes, milk, red wine vinegar, wine and
herbs, stir a couple of times and keep cooking for 3-4 hours.
We started quite late so we had the
sauce on the cooker for only 2 hours, but it was fine. If you don't
like really big pieces of vegetables in your sauce you can always mix
everything! I prefer to mixed it just a little bit! Boil some pasta,
mix the sauce with a little bit of cheese, take your glass of wine
and enjoy! Bon Appetite!
